How does that clay work?
With clay, heavy pollution is removed from the pores and the surface of the paint. This is pollution that is so strongly attached to your paint that you will not get it removed with normal washing. 

What does this pollution have?
Two things: color difference and loss of gloss depth. Think of it as a polluted mirror: in a dirty mirror you see your own reflection less clear. Imagine that this reflection is the color of your motorcycle; You look in the reflection of the light, but You see the color less sharp. That sharpness is equivalent to color difference, the color looks less like the color when your engine came new from the factory.
Loss of gloss depth: you look through the pollution to your lacquer, making it less beautiful shiny.
